Spring Chicken's Breakfast Nests

These lil breakfast treats were what I came up with for my next entry in the Nursery Challenge in the Playful Pantry. It's inspired by the cute verse I'm a Spring Chicken and it combines some great flavors into a handy pick up and eat package! Read more ! These would look lovely on a buffet table. :)
Ingredients:
26oz shredded hash browns, fresh, refrigerated or frozen but thawed
2t corn starch
1/2lb bacon
12 eggs
1/4 cup heavy cream
3-4 green onions
8oz goat cheese crumbles
dash of hot sauce(chipotle tabasco is really good)
1/2t celery powder(optional)
1t dry mustard or dijon
kosher or sea salt and fresh ground pepper
Directions:
1. Cook bacon in large, heavy skillet(I use cast iron) until crisp and break into small pieces OR, do like I do... slice the bacon into small pieces, first, then fry. It works great and takes less time! :)
2. Set aside but reserve grease in skillet.
3. For Hash Brown Baskets
4. Beat 2 eggs in large glass bowl with a lil salt and pepper.
5. Add hash browns, add about 1T of reserved bacon grease, sprinkle top of potatoes with corn starch and then toss to mix, well. Try not to break up the potatoes too much, though.
6. Spray muffin tins with no stick spray.
7. Fill 12(may need a couple more cups, or you may have a lil left over... I didn't) muffin tins with potato mixture.
8. Gently press middle down so that you create a well in the hash browns. You want to make sure the bottom is covered, but don't leave it too thick or you won't end up with much of a cup! :) See Photo
9. Bake on the bottom rack of oven for about 35-40 min, at 400. You want the tops to be golden brown and the potatoes warmed through and done. See Photo
10. Let rest in baking tin while preparing filling.
11. For Eggs
12. Beat remaining eggs well with a lil more salt and pepper, celery powder, mustard, cream and hot sauce.
13. Heat bacon grease back up in skillet over medium/low heat.
14. Scramble eggs, whisking well to break eggs up, well.
15. When eggs begin to set around edges, add bacon, cheese and green onion and continue to whisk and stir until done.
16. To Serve
17. Carefully remove baskets from pan. Mine came right out, no problems, but a toothpick run around the rim should loosen it plenty, if needed.
18. Fill hash brown nests with egg mixture.
