Spring Beet Salad With Walnuts

With their jewel-like color, beets always make a lovely addition to our meals. Here they are dressed up and taken to another level. Prep time includes cooking beets.
Ingredients:
1 lb fresh beet, cooked
1/2 cup walnuts, finely chopped
1 tablespoon horseradish
1/2 cup sour cream (or plain joghurt)
1 tablespoon mayonnaise
1/4 cup half-and-half cream
1/3 cup orange juice
salt and pepper
2 tablespoons chopped parsley (to garnish)
Directions:
1. Peel and dice beets.
2. Add walnuts.
3. Combine dressing ingredients and add to beets.
4. Garnish with parsley.
