This recipe is adapted from Southern Living. Preparation time includes standing time.
Ingredients:
3 cups water, boiling
2 cups cornmeal
2 teaspoons salt
1/2 cup butter, cut up
2 cups milk (not skim)
4 large eggs, beaten slightly
1 tablespoon baking powder
Directions:
1. Preheat oven to 375 degrees (Fahrenheit) and lightly grease a 13x9 inch baking dish.
2. Measure cornmeal into a large heatproof bowl.
3. Gradually pour boiling water over cornmeal and stir until mixture is smooth.
4. Add salt and butter and stir until butter melts and mixture is well blended.
5. Let mixture stand 10 minutes.
6. After mixture stands, stir in milk and beaten eggs gradually.
7. Stir in baking powder.
8. Pour into prepared baking dish and bake at 375 degrees for 45 to 50 minutes until lightly browned.
