Fantastic flavor wholesome comfort food without any animal fat.
Ingredients:
2 large spring onions chopped
1 cup of celery chopped
1 1/2 cups carrots sliced thin
1/4 teaspoon fresh ground black pepper
4 tablespoons parsley
4 tablespoons jalapeño pepper for garnish
one 15 oz package of green split peas
1packages of dried organic morel mushrooms
1 package of organic dried shitake mushrooms
2 quarts of water
1 1/2 teaspoon of sea salt
1/4 teaspoon of turmeric
Directions:
1. In a pot add the Mushrooms and bring to a boil
2. Drain the broth through a strainer and set the mushrooms aside.
3. Add the Turmeric, sea salt and the nutritional yeast to a pot and bring to a simmer. Add the rest of the ingredients except for the Jalapeño.
4. Cook for 2 hours on low heat stirring often.
5. Ladle into a bowl and garnish of minced Jalapeño or parsley
6. ** Note, when replacing chicken broth use herbs associated with chicken, for me I add some Sage or sometimes Rosemary
