Split Pea Soup With Fresh Peas and Potatoes

Ingredients:
2 teaspoons extra virgin olive oil
1 onion, chopped
1 stalk celery, chopped
1 carrot, chopped
2 small red potatoes, cubed
1 teaspoon cumin
black pepper, 1-2 turns of grinder
1 cup split peas
4 cups water or 4 cups vegetable stock
1 large bay leaf
1/2 cup fresh peas (frozen okay)
1 teaspoon sea salt
1 tablespoon fresh dill (optional) or 1 teaspoon dried dill (optional)
Directions:
1. Saute chopped onion in oil until they begin to soften.
2. Add celery, carrot, potatoes, cumin, and pepper; saute 5-7 minutes.
3. Add split peas, water, and bay leaf.
4. Bring to a boil, lower heat, and simmer for 1 1/2 hours.
5. Add remaining ingredients; stir. Cook for a few more minutes until peas are tender. Enjoy!
