Split Pea Soup

Easy to make, healthy and just delicious!
Ingredients:
1 (1 lb) package dried split peas
1 cup diced carrot
1 cup finely chopped onion
1/2 cup pealed diced parsnip
1/2 cup chopped celery
1 teaspoon dried thyme
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon pepper
5 1/2 cups chicken broth
3 cups water
2 lbs smoked ham hocks
1 teaspoon curry
Directions:
1. Combine peas, carrotts, onion, parsnip, celery, thyme, salt, pepper, broth and the water. Add Ham Hocks, submerging them in mixture.
2. Cover, cook on low heat setting for 2 hours until peas are very soft.
3. Remove ham hocks; skim fat from surface of soup. Trim fat from hocks. Cut meat from bones and shread; stir into soup. Ladle into 6 bowls. Garnish each serving with garlic croutons and chopped parsley.
