Split Pea Soup

Traditional thick, smokey split pea soup
Ingredients:
1 lb dried split peas
11 cups water
1 teaspoon butter
1 large onion, chopped fine
3 chicken bouillon cubes
1/2 teaspoon garlic powder
1/2 teaspoon oregano leaves
1/4 teaspoon celery salt
1/2 teaspoon pepper
2 carrots, sliced
1 ham bone or 1 smoked ham hock
Directions:
1. Sort and rinse split peas.
2. Combine split peas, water,butter,onion,boullion,garlic,oregano,celery salt and pepper in large dutch oven. Bring to a boil then turn down to low heat. Simmer 1 hour uncovered.
3. Add ham bone and carrots. Simmer about 1 1/2 hours or until thick, stirring occationally.
4. Remove ham bone and rinse off. Cut meat off bone into small pieces and add back into soup.
5. Taste for salt add as desired.
