Try this for a low calorie treat. 1 Protein exchange and 1/2 bread Ingredients:
3 ounces raw yellow split peas, rinsed |
2 cups water |
1/4 cup onion, diced |
1/4 cup carrot, shredded |
1 (6 g) package instant chicken broth |
1/4 cup flour, plus |
2 tablespoons flour |
1 teaspoon baking powder |
1 dash salt and pepper |
1/4 cup skim milk |
1 egg, beaten |
1 tablespoon oil |
1 teaspoon oil |
Directions:
1. In saucepan combine peas, water, onion, carrot and broth mix. 2. Bring to a boil. 3. Reduce heat, cover and simmer, stirring occasionally about 30 minutes until peas are soft. 4. Let cool. 5. In a bowl, combine flour, baking powder, salt and pepper. Add milk and egg to cooled split pea mixture and stir. 6. Stir into dry ingredients. 7. In a 10 inch nonstick skillet, heat 1 tsp oil. 8. Spoon 4 heaping tablespoons of batter into skillet, forming 4 small fritters. 9. Cook until edges bubble and fritters are browned on the bottom. 10. Turn over and cook until browned on the other side. 11. Remove to a warmed plate. Set aside and keep warm. 12. Repeat procedure with remaining oil and batter. |
