Brighten up your table with this colorful rum-splashed version of classic holiday ambrosia. Ingredients:
3 ruby red grapefruit |
2 cups halved strawberries (about 7 large) |
3 kiwifruit, peeled and cut into wedges |
3 tablespoons light brown sugar |
3 tablespoons dark rum |
1/4 cup flaked sweetened coconut, toasted |
Directions:
1. Peel and section grapefruit over a bowl; discard membranes. 2. Combine grapefruit sections, strawberries, and kiwifruit in bowl. 3. Combine brown sugar and rum in a small bowl, stirring well. Add rum mixture to fruit, tossing gently to combine. Cover and chill until ready to serve. Sprinkle with toasted coconut. |
