Spinach, Yellow Pepper and Brown Rice Pilaf-Style Risotto

Ingredients:
1 1/2 cup brown rice, uncooked
4 cups water
4 cups spinach
3 green onions
1 large red pepper
1 cup carrots, chopped
3/4 tbsp olive oil
1 tsp marjoram
Directions:
1. Chop and sauté carrots, yellow or red pepper and green onion in well heated olive oil; add rice for one minute or until slightly translucent. Add water, spices and a bay leaf. Can be served as a healthy side dish or with added beans and peas of your choice for a complete vegan dish. This is great for hungry vegans caring for their weight as it is guaranteed to keep you feeling well, healthy, energetic and full for a long time.
