Spinach with Sesame Seeds , Japanese Goma-Ae

A little high in sodium, but you can control that by how much soy sauce you use. This recipe is a GREAT way to enjoy spinach, whether you usually do or not. If you don't tend to like spinach, you may find that the nuttiness of the sesame seeds and the sweetness of the sugar balance out the natural bitterness of the spinach.
Ingredients:
1 bunch spinach, raw
1 tbsp sesame seed, toasted and ground
1 1/2 tsp sugar
1 tbsp soy sauce, such as eden organic shoyu
Directions:
1. Toast sesame seeds in dry saute pan over high heat. Stir constantly. Remove from pan quickly when seeds are medium brown and you hear a lot of cracking. Grind with mortar and pestle or in small food processor. Grinding breaks the hull and makes the nutrients accessible for digestion.
2. Rinse spinach well. Steam until bright green, or as done as you like.
3. Drain and rinse under cold water. Gather up leaves and squeeze as much liquid out as you can.
4. Toss with sesame seeds, sugar, and soy sauce. Alter amounts of seasoning to suit your taste.
5. Also good with kumquat zest!
6. Use the liquid for some other cooking if you can, as it has nutrients in it as well. One suggestion is to use it as the liquid for miso soup.
