Spinach with Pine Nuts

Ingredients:
4 teaspoons pine nuts
1 teaspoon olive oil
2 (7-ounce) packages fresh baby spinach
1 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup raisins
Directions:
1. Place pine nuts in a large nonstick skillet over medium-high heat. Cook, stirring frequently, 3 minutes or until lightly toasted. Remove from pan, and set aside.
2. Heat oil in same pan over medium-high heat. Add spinach and garlic; cook, stirring occasionally, 3 to 4 minutes or just until spinach wilts. Sprinkle with salt and pepper; add pine nuts and raisins. Toss well.
