Spinach Stew

A sunflower seed base with spinach and tomatoes, served over rice. Vegetarian.
Ingredients:
1/2 c. canola oil
1 small onion
1 t. chopped garlic
10 oz. frozen chopped spinach
1 c. sunflower seeds
1/4 c. water
3 tomatoes
1/2 can tomato paste
1/2 t. cayenne pepper
1 t. salt
Directions:
1. Put sunflower seeds in food processor and grind till fine. Add water and process to paste.
2. Cook spinach (microwave appx 4 mins).
3. Chop onions and sautee in oil for 2 minutes, then add garlic.
4. Add sunflower seeds to onions and oil. Stir until broken up a little.
5. Add spinach, tomatoes (chopped, can of stewed works too), tomato paste, salt and cayenne (to taste). Stir until well blended.
6. Reduce heat to low, cover and simmer for 20-30 mins.
7. Serve over rice, if desired.
