This can be an appetizer, a brunch dish or a vegetable side dish. Even people who don't like spinach will like this!
Ingredients:
2 tablespoons butter, melted, divided
1 cup flour
1 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon pepper
3 eggs
1 cup milk
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
2 cups shredded cheddar cheese
2 cups shredded monterey jack cheese
1 cup chopped onion
sliced pimientos, optional
Directions:
1. Brush the bottom and sides of a 13x9 baking dish with 1 tablespoon of the melted butter
2. In a large bowl, combine the flour, baking powder, seasonings, eggs, milk and remaining melted butter
3. Stir in the spinach, cheeses and onion
4. Spread in prepared pan
5. Bake 350 for 30-35 minutes or until a toothpick inserted near the center comes out clean and the edges a lightly browned
6. Cut into squares and garnish with pimientos, if desired
