This is not your usual puffy souffle. I had never made a souffle because I thought it to difficult, but a friend gave me this to try and voila! it is easy, and delicious and oh so versatile - even my husband liked it and he has an aversion to ricotta! Read more !
Ingredients:
3 eggs, slightly beaten
1 cup ricotta or cottage cheese
1 stick butter, softened
1-2 cups cheddar cheese (manchego or gouda will work too)
1, 500 gram package frozen spinach or fresh spinach, stems removed and steamed until limp; drain either very well.
1-2 teaspoons red chili flakes or black pepper
1/4 cup flour
add ins if desired
1-2 cloves garlic, minced fine
6 strips bacon, cooked & crumbled
1/2 cup very well sauted mushrooms
Directions:
1. In a mixing bowl, combine all ingredients you are using together, it will be on the sticky side.
2. Pour it into a well buttered 2 quart casserole dish.
3. Place the casserole in a pan of hot water (just coming up the sides about 1 inch).
4. Bake in a 350 degree F oven for 45 minutes or until top of souffle is starting to brown a bit.
