Spinach Salad with Fresh Cherries

Substitute a drained16.5-ounce can of Queen Anne cherries if fresh cherries aren't in season.
Ingredients:
1/4 cup red wine vinegar
2 tablespoons olive oil
2 tablespoons water
1 tablespoon sugar
1 1/2 teaspoons whole-grain dijon mustard
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 cups pitted fresh rainier cherries
1 (7-ounce) package baby spinach
1/3 cup (1.3 ounces) crumbled blue cheese
2 tablespoons nutlike cereal nuggets (such as grape-nuts)
Directions:
1. Combine first 7 ingredients in a medium bowl; stir well with a whisk. Add cherries, tossing gently; cover and chill 1 hour.
2. Toss spinach and cheese together in a large bowl. Pour cherry mixture over spinach mixture. Toss gently. Divide salad among 6 individual salad plates. Sprinkle each serving with cereal. Serve immediately.
