Spinach Salad

My aunts version of a classic! Its very simple to make and it is very good for you. Enjoy!
Ingredients:
4 slices bacon (turkey bacon workes well too)
6 cups spinach leaves loosely packed
1 1/2 cups fresh mushrooms sliced
1/2 cup purple onions (thinly sliced and seperated into rings)
3 large eggs (hardboiled and sliced)
------dressing
1/4 cup red wine vinegar
1 tablespoon sugar
1/2 teaspoon dry mustard
2 tablespoons lemon juice
2 teaspoons vegetable oil
1/8 teaspoon fresh ground pepper
Directions:
1. Fry the bacon until all fat is rendered and it is crispy. Set aside and let cool before crumbling into pieces.
2. Mix all dressing ingredients and bacon pieces well ommitting the pepper (either shake in a jar or whisk vigorously) until completely combined and set aside.
3. Mix spinach, mushrooms, onions, and eggs in a big salad bowl. Pour all dressing all over salad and toss well. Serve within 15 minutes with a sprinkling of pepper.
