Fresh spinach instead of your usual iceberg lettuce salad. It's healthy for you and provides a lot of nutrients. Plus it's delicious!
Ingredients:
9 cherry tomatoes, cubed
1/8 onion, cubed
1 salt
1 pepper
3 fresh basil leaves, chopped
1/2 tsp garlic, minced
3 tbsp olive oil
2 tbsp lemon juice
4 cups fresh spinach
Directions:
1. Combine cherry tomatoes, onion, basil, salt, pepper, and garlic into a bowl.
2. Let sit for about an hour so that the salt can pull any juices out of the tomatoes and onion.
3. Add lemon juice and olive oil to the mixture and stir.
4. Pour liquid over fresh washed spinach for a spinach salad.
