Spinach Pasta Salad

This is a colorful salad that everyone raved over today! The recipe came together as I was walking through the new grocery store in the city where I work. Found a container of yellow and red cherry tomatoes marked down to 98 cents for quick sale that were still perfect. Read more ...and it grew from there! First time i had used the yellow ones, and I will keep using them. Fantastic flavor! Sart the night before for best marrying on flavors, if possible. But not necessary.
Ingredients:
10 oz penne pasta
half pint red cherry tomatoes, halved
half pint yellow cherry tomatoes, halved
**i don't always have both colors, all red is fine
4 oz baby spinach leaves - stems chopped off
1 can jumbo ripe olives, drained, slice olives in half lengthwise
about 1/4 c chopped roasted red pepper
1/4 med red onion, chopped fine
about 1/2 a keilebasa, diced small
half pound thick cut bacon, cut into small pieces and fried crisp
4 oz mozzerella cheese, cut into small cubes, or, bite size balls, halved
1 bottle good italian dressing (i use ken's 3 cheese northern italian
3 t parmesan
garlic pepper
salad supreme seasoning
Directions:
1. Cook pasta in water well salted with kosher salt and a drizzle of olive oil, until al dente
2. Rinse well with cold water to stop the cooking process and cool the pasta
3. While pasta is cooking cut tomatoes and olives into large mixing bowl
4. Add red pepper, onion, kielbasa
5. Add pasta when cool
6. Mix together parmesan and a few shakes of garlic pepper and salad supreme
7. Pour about 3/4 bottle of dressing over the pasta mixture, add parmesan mixture and mix all together well
8. ((At this point, I put in fridge over night and finish before serving.))
9. About half an hour before serving, fry bacon and lay on paper towel
10. Tear / chop any stems off spinach leaves
11. Cube cheese
12. Add bacon, spinach and cheese to salad.
13. Stir and taste, I usually add a little more dressing/spices as needed as the pasta will soak up some of the dressing overnight.
