Spinach, Mushroom, Tomato Low Fat Quiche

While this is not the lowest fat quiche ever, it is yummy and a good compromise. I use shitake mushrooms for more flavor and texture.
Ingredients:
1 cup eggs
1 cup egg whites
1 cup ligh vanilla soymilk
3 cups spinach, cooked, chopped
1 cup reduced fat 4 cheese mexican shredded cheese
1 cup sliced mushrooms
1/2 cup cherry tomatoes, sliced
1 small red onion, chopped
Directions:
1. steam, drain, and chop spinach
2. chop mushrooms, tomatoes, onions
3. beat eggs, soymilk, egg whites
4. mix all ingredients
5. bake at 350 for about an hour
