Spinach Lasagna Rollups

Lasagna w/Spinach Ricotta Filling topped with a light cream sauce
Ingredients:
2 lbs ricotta cheese
8 ounce cream cheese
1 lb lasagna
1 lb spinach
8 ounce tomato sauce
4 ounce cream
2 large eggs
1 cup mozzarella cheese
Directions:
1. Mix ricotta with eggs, and thawed/drained chopped spinach. Season to taste. Refrigerate.
2. Boil Lasagna noodles to desired softness. In a small pan mix cream cheese, cream, and tomato sauce until creamy. Season to taste.
3. Spread ricotta onto each noodle and rollup. Place in greased baking pan and top with sauce. Cover with foil.
4. Bake 25 minutes at 325 degrees. Top with mozzarella and lightly cover. Bake additional 10 minutes
