Spinach Lasagna

A quick and easy spinach lasagna with Alfredo sauce.
Ingredients:
8 ounces lasagna noodles
1 tablespoon olive oil
1/2 teaspoon salt
1 (16 ounce) container ricotta cheese
1/2 cup parmesan cheese
1 (10 ounce) package frozen spinach, thawed and the water squeezed out of it
1 egg
1 (16 ounce) jar alfredo sauce
1 cup mozzarella cheese, grated
1/2 cup parmesan cheese
Directions:
1. Preheat oven to 375 degrees.
2. Cook the lasagna noodles in a large pot of boiling water with olive oil and salt until al dente. Drain.
3. Mix the ricotta, 1/2 cup of Parmesan, spinach, and egg together.
4. Put a little of the Alfredo sauce in the bottom of a 6 x 9 inches baking dish.
5. Place a layer of lasagna noodles over the sauce. Cover this with half the spinach-ricotta mixture, then Alfredo sauce, then another layer of noodles, the rest of the spinach-ricotta mixture, the rest of the Alfredo sauce, then cover with lasagna noodles.
6. Over this sprinkle the mozzarella cheese and then the 1/2 cup Parmesan cheese.
7. Cover with foil and bake for 30 minutes.
8. Remove foil and bake for 15 more minutes.
9. Remove from oven and let stand for 10 minutes before serving.
