Ingredients:
10 ounces frozen spinach, thawed
1/4 teaspoon nutmeg
1/8 teaspoon sugar
1 cup white cheese
2 teaspoons flour
2 tablespoons parmesan cheese, grated
2 teaspoons flour
2 tablespoons parmesan cheese, grated
1 egg yolk
1/8 teaspoon black pepper
1 dash cayenne pepper
2 egg whites
Directions:
1. Preheat over to 200°C.
2. Drain and squeeze excess water out of spinach.
3. combine spinach, nutmeg, and sugar.
4. Place white cheese, flour, parmesan cheese, egg yolk, black pepper and cayenne pepper into a blender and mix for 30 seconds or until well-blended.
5. Add to spinach mixture and mix well.
6. Whip egg whites until they form stiff peaks. Gently fold in the spinach mixture.
7. Pour into a baking pan. Bake uncovered for 20 minutes.
