Spinach Egg Pie

Ingredients:

  • 2 eggs
  • 6 oz spinach

Directions:

  1. Preheat oven to 350 degrees. Combine whole eggs with whites, set aside. In a skillet, cook onion and spinach until spinach is wilted. While the veggies cool, coat a pie pan with nonstick spray. Mix veggies and eggs and pour into pie pan. Bake 40-45 minutes or untill set.
