Spinach Cups

These are both a roll and a serving of veggies, but no one will care. They are so good my family asks for them as a snack in front of the TV. This is my own recipe. Trust me you will love them.
Ingredients:
1 lg bundle fresh spinach from the produce isle
4 oz cream cheese softened
6 tbsp parmeasan shredded cheese (divided)
1 pk 8 ct butter biscuits from diary isle
Directions:
1. Pre heat oven to 350 degrees
2. Blanch spinach in water until shrunk but dont over cook.
3. cool slightly.
4. Squeeze out all liquid.
5. set aside
6. Take apart biscuits and flatte.n.
7. Place into a muffin tin so the biscuits goes up the sides.
8. IN a bowl mix softened cream cheese and 3 tbsp parmeasan cheese.
9. mix in squeezed out spinach and mix well.
10. place evenly into the cups.
11. Top with remaining cheese.
12. Bake 20-30 minutes until buscuits are light brown in color.
13. Serve with a meat and salad or potatoes.
