Spinach Casserole With Turkey Sausage (Zone)

This is a good high protein breakfast meal. Made the weekend before and cut in to individual serving sizes, it make a great quick breakfast, that is high in protein.
Ingredients:
15 ounces ricotta cheese, fat free
16 ounces frozen chopped spinach
1 cup salsa
10 eggs
1/2 cup nonfat milk
1 lb turkey breakfast sausage
1 teaspoon chopped garlic
1 teaspoon crushed red pepper flakes
1 onion
1/8 cup parmesan cheese
Directions:
1. Heat oven to 325.
2. Beat eggs well.
3. Mix in ricotta, spinach salsa and milk.
4. Brown sausage, garlic, peppers, and onion until meat is cooked through.
5. Add meat mixture to egg mixture and stir.
6. Use spray oil to grease and 11x13 pan.
7. Pour egg and sausage mixture into pan.
8. Top with Parmesan cheese.
9. Bake at 325 for 1 hour or until fork comes clean.
