Spinach Calzones With Blue Cheese

The combination of onions, mushrooms, and fresh spinach packs a serving of veggies into each of these easy, impressive calzones. A pizza cutter works well for dividing the refrigerated dough into 4 equal portions. Read more . Excellent for a light lunch or supper.
Ingredients:
1 (10-oz.) can refrigerated pizza crust
cooking spray
4 garlic cloves, minced
4 c. fresh spinach leaves
8 (1/8-inch-thick) slices vidalia or other sweet onion
1 1/3 c. sliced cremini or button mushrooms
3/4 c. (3 oz.) crumbled blue cheese
Directions:
1. Preheat oven to 425F.
2. Unroll dough onto a baking sheet coated with cooking spray; cut into 4 quarters.
3. Pat each quarter into a 6 x 5-inch rectangle.
4. Sprinkle garlic evenly over rectangles.
5. Top each rectangle with 1 cup spinach, 2 onion slices, 1/3 cup mushrooms, and 3 tablespoons cheese.
6. Bring 2 opposite corners to center, pinching points to seal.
7. Bring remaining 2 corners to center, pinching all points together to
8. seal.
9. Bake at 425F. for 12 minutes or until golden.
10. Note: To make bite-size appetizers/hors d' oeuvres, cut dough rectangles smaller and fill with proportionately smaller quantities of filling.
11. Reduce baking time to about 10 minutes; watch closely so as not to burn the dough.
12. Note: Endless filling possibilities... add shredded cooked chicken,
13. coarsely chopped shrimp or cocktail shrimp, fresh cooked crabmeat or lobster, smoked or fresh salmon, shaved rare roast beef.
14. Try different cheeses.
15. Substitute chopped broccoli for the spinach.
16. Add diced or thinly sliced tomatoes.
17. Add a marinara or other favorite dipping sauce.
18. Substitute refrigerated crescent or croissant dough for the pizza dough.
