This is a delicious recipe I discovered in the cookbook Deceptively Delicous . I have modified the ingredients to create a moist, irresistable brownie. Do not be fooled by the spinach, you can barely taste it. An interesting fact about Spinach is that it contains antioxidants that keep your eyes healthy. Be sure to completely cool the brownies before enjoying, or the spinach flavour will be too strong.
Ingredients:
nonstick cooking spray
3 ounces semisweet chocolate
1 cup spinach, pureed
1/2 cup brown sugar, firmly packed
1/4 cup unsweetened cocoa
2 tablespoons margarine
2 teaspoons vanilla extract
2 large egg whites
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
Directions:
1. Preheat oven to 350 degrees.
2. Coat an 8x8 inch baking pan with cooking spray.
3. Melt chocolate in a double boiler or over very low heat.
4. In a large bowl combine the melted chocolate, spinach puree, sugar, cocoa powder, margarine, and vanilla. Whisk until smooth and creamy for 1 to 2 minutes.
5. Whisk in egg whites. Stir in the flour, baking powder, and salt with a wooden spoon.
6. Pour the batter into the pan and bake 35 to 40 minutes.
7. Cool completly in the pan
8. Cut into 12 bars.
9. Enjoy!
