Spinach Bread

This is great for spring or a St. Patrick's Day treat as well as any other time snack or part of a great meal. Quick and easy and simply delicious.
Ingredients:
1 loaf french bread or italian bread,cut in half lengthwise
1 lb spinach, fresh is best but if your using frozen, defrost under cold water and drain well(remove all moisture)
1 onion, chopped
1 pound mushrooms, sliced
1 stick butter
8 oz. cream cheese
4 to 5 cloves garlic, minced
1 tablespoon creole spice
salt and cracked black pepper to taste
dash of hot sauce
8 oz. italian blend shredded cheese
shredded cheddar cheese(optional)
Directions:
1. Preheat oven to 350 degrees.
2. Place bread on baking pan,
3. In large skillet, cook onions, garlic, and mushrooms in butter until tender(about 3 minutes)
4. Add spinach, cream cheese and spices including hot sauce and continue to cook for 2 minutes.
5. Stir in Italian cheese
6. Spoon mixture evenly on both halves of bread
7. Sprinkle with cheddar cheese and place in oven
8. bake at 350 for 10 minutes or until cheese is melted and lightly brown.
9. *you can place under broiler if you want a darker brown bread.
10. Remove from heat and allow to set 1 to 2 minutes.
11. Cut into serving slices or wedges
