Spinach Balls With Mustard Sauce

These are so good. My kids pop them in their mouth and love them. I like to make these for Christmas because of their green color but they would be great to any occasion.
Ingredients:
2 (10 ounce) packages frozen spinach, thawed, squeezed dry
2 cups herb stuffing mix
1 cup firmly packed parmesan cheese
1/2 cup butter, melted
4 small green onions, chopped
3 eggs
1 dash nutmeg
1/4 cup mayonnaise
3 tablespoons dijon mustard
Directions:
1. Combine all ingredients in a large bowl and mix well.
2. Shape into 1-inch balls, cover, refrigerate or freeze until ready to bake.
3. Preheat oven to 350.
4. Set balls on ungreased baking sheet and bake until golden brown, about 10 to 15 minutes.
5. Serve with mustard sauce.
6. MUSTARD SAUCE: Mix together; adjust mustard to taste.
