Now, I normally don't like using packaged ingredients for the most part ... However these are just good. Very quick easy and they always are the first appetizer to go. Stove Top stuffing, frozen spinach and a few fresh ingredients make this so easy to put together.
Ingredients:
1 (6 ounce) box stove top stuffing mix for chicken
2 (10 ounce) packages frozen chopped spinach
2/3 cup italian salad dressing (bottled is fine)
3 eggs, lightly beaten
1 cup parmesan cheese, grated
1 cup fresh mushrooms, chopped
1 small onion, chopped
1 cup hot water
Directions:
1. Mix - Just add all the ingredients together in a medium size bowl and mix well. Then form into 1 or golf ball size appetizers. Place on a baking sheet sprayed with pam or a non stick spray or you can line the pan with parchment paper.
2. Bake - Heat the oven to 400 and bake the balls for 12-15 minutes until golden brown. This will make around 40 balls.
3. I usually split the recipe in half, but it depends on the crowd. These never last very long. I like to serve a creamy parmesan dip on the side.
