This recipe came from Variety Pack Favorite Recipes 2002, and even my picky niece loved it. I used fresh spinach instead of frozen, and I baked it at 350 until the very end. There were no leftovers...
Ingredients:
10 ounces chopped spinach
6 ounces artichoke hearts
1 cup grated parmesan cheese
1 cup mayonnaise
4 ounces diced green chilies
Directions:
1. Defrost and drain spinach.
2. Drain artichokes and dice into small pieces.
3. Mix grated parmesan cheese, mayonnaise, chilies, spinach, and artichoke hearts.
4. Pour into an 8x8 dish and broil in oven until top is golden brown.
5. When hot, stir 2 to 3 times and sprinkle with extra parmesan cheese.
