Spinach, Apple, and Cheese Panini Sandwiches With Caramelized On

This recipe came from the Summer 2008 issue of Clean Eating. It makes a fantastic light, healthy dinner...especially during the summer months. It has 288 calories, 5 g fat, 42 g carbs, 6.5 g fiber, 11 g suars, 16 g protein, 407 mg sodium, and 10 mg cholesterol.
Ingredients:
1 teaspoon extra virgin olive oil
1 cup sliced yellow onion (or about 1/2 a large onion)
1 large ambrosia apple, thinly sliced and tossed with juice of 1 lime
1 cup spinach leaves, stems removed
4 ounces low-fat swiss cheese, thinly sliced into 4 slices
8 slices whole wheat sourdough bread or 4 ciabatta rolls
Directions:
1. Heat a medium saucepan over medium-high heat for 1 to 2 minutes. Add oil and onions. Stir occasionally. After about 5 minutes, onions will start to caramelize, and you will need to stir constantly for about 5 more minutes. Onions should be evenly browned, not burnt. Remove from heat and set aside.
2. To assemble sandwiches, spread about 2 tablespoons of onions on each of 4 pieces of bread. Top each slice with about 4 spinach leaves, 1 slice of cheese, and 3 pieces of apple. Top with other slices of bread.
3. Heat grill. After assembling sandwiches, grill for about 2 1/2 minutes, then flip and grill for another 2 1/2 minutes. Serve with extra apple slices.
