Spinach And Sun Dried Tomato Fritta

Why not have breakfast for dinner? This is super filling and really delicious. It's one of my favorite meals.
Ingredients:
2 tablepoons butter
7-8 small red potatoes, thinly sliced
salt to taste
1 cup firmly packed bite-size pieces of spinach
1/4 cup oil-packed sun-dried tomatoes, drained and sliced
3 medium green onions,cut into 1/4-inch pieces
6 eggs
2 tablespoons cream or milk
1/4 teaspoon dried marjoram leaves
3/4 cup shredded swiss cheese
Directions:
1. Melt butter in large non-stick skillet over medium heat.
2. Add potatoes and some salt to skillet.
3. Cover and cook 10 minutes, stirring occasionally, until potatoes are tender.
4. Stir in spinach, tomatoes and onions.
5. Cook, stirring occasionally, just until spinach is wilted.
6. Reduce to low heat.
7. In a bowl, beat eggs, milk, marjoram and salt.
8. Carefully pour over potato mixture.
9. Cover and cook 6-8 minutes or until top is set.
10. Sprinkle with cheese.
11. Cover and cook about 1 more minute or until cheese is melted.
