This soup is excellent with a thick slice of bread.
Ingredients:
10 ounces spinach, frozen chopped
1 cup basmati rice
1 small onion, finely chopped
1 cup vegetable broth
8 cups water
1/2 teaspoon garlic powder
1 pepper to taste
6 ounces yogurt, plain or lemon soy (about 3/4 cup)
Directions:
1. Place all the ingredients, except the yogurt, in a large pot and cook over medium heat for 30 minutes. Add yogurt and cook another 5 minutes. Serve warm.
