Spinach And Rice: Greek Or Italian?

This is an easy side that fits nicely into a Greek or Italian menu depending on the spices/seasonings and cheese you choose. Also great as a vegetarian main dish!
Ingredients:
2 tablespoons olive oil
1 large onion, chopped
2 pkgs fresh spinach, rinsed and stemmed
1 (8 ounce) can tomato sauce
2 cups water

1/2 tsp garlic powder
1/2 tsp dried oregano
1/2 tsp dried basil
grated parmesan cheese

1 teaspoon dried dill weed
1 teaspoon dried parsley
1/ 2 tsp garlic powder
crumbled feta cheese
fresh lemon juice
1/2 cup uncooked white rice
Directions:
1. Heat olive oil in a large skillet over medium-high heat. Saute onions in the oil until soft and translucent. Add spinach, and cook stirring for a few minutes, then pour in the tomato sauce and water.
2. ~~~For Italian Spinach and Rice:
3. Bring to a boil, and season with oregano, basil, garlic, salt and pepper. Stir in 1/2 cup uncooked rice, reduce heat to low, and simmer uncovered for 20 to 25 minutes, or until rice is tender. Add more water if necessary.
4. Season with salt and pepper to taste. Serve topped with grated parmesan cheese.

6. Bring to a boil, and season with parsley, dill, garlic salt and pepper. Stir in 1/2 cup uncooked rice, reduce heat to low, and simmer uncovered for 20 to 25 minutes, or until rice is tender. Add more water if necessary.
7. Season with salt and pepper to taste. Serve with crumbled feta cheese and a spritz of fresh lemon juice.
