Another fabulous use for repurposed Sauted Caraway Bell Peppers. The seasoning in the peppers is all that is needed for this simple breakfast dish.
Ingredients:
1 cup spinach, fresh chopped
1/4 cup peppers.html >sauteed caraway bell peppers
1/4 c sliced mushrooms
1/2 cup egg substitute (or 2 eggs beaten)
1 slice provolone
Directions:
1. Spray small saute pan with PAM and heat.
2. Saute sliced mushrooms for a minute or so, then add caraway bell peppers and spinach.
3. Continue sauting until spinach is fully wilted.
4. Pour in egg to cover vegetables and top with provolone.
5. Reduce heat and let simmer until egg is fully cooked.
