Ingredients:
3 (10 oz.) pkg. frozen chopped spinach, defrosted and well
drained
1/2 lb. feta cheese, crumbled
7 eggs
1/2 lb. apollo filo leaves
1/4 c. fresh italian parsley, chopped
1 bunch scallions, sliced and sauteed in oil until soft
1/4 lb. or more melted butter
2 tsp. salt
pepper to taste
Directions:
1. Preheat oven to 375 degrees. Bring dough to room
2. temperature.
3. Beat eggs well. Add spinach, cheese, parsley, scallions,
4. salt and pepper. Brush sides and bottom of 9x13 inch pan
5. with melted butter. Carefully place 1 sheet of dough in pan
6. with dough extending up sides and ends. Brush with butter.
7. Add another piece of dough. Repeat using 10-12 pieces of
8. dough; save 3 sheets for top.
9. Add spinach mixture. Top with 3 pieces of dough buttering
10. each layer. Fold dough from bottom layers down onto top
11. layers. Brush with butter. Cut 3 slits in top. Bake for 50
12. minutes. This is delicious to serve to a crowd.
