Spinach And Feta Mini Strudels

This is a variation of Spanakopita but instead of being cut into squares to serve these are festive little spirals. They make nice little appetizers. I sometimes add 1/4 cup parmesan cheese just to vary the flavour a bit.
Ingredients:
1 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, finely chopped
1/2 lb feta cheese, crumbled
2 10oz/300 g pkg frozen chopped spinach, defrosted and squeezed dry
2 eggs
3 tbsp chopped fresh dill
1/2 tsp pepper
pinch of nutmeg
1 pkg phyllo pastry (20 sheets)
1/2 cup dry breadcrumbs
1/3 cup melted butter or olive oil
Directions:
1. Prepare filling by heating oil in a small skillet and cooking onions and garlic until tender and fragrant.
2. Place cheese, spinach, eggs, dill, nutmeg and pepper in a large mixing bowl. Add the onions and garlic and combine well. Reserve.
3. Open package of phyllo pastry and lay out on counter. Cover with plastic wrap and then a damp tea towel. Have breadcrumbs at hand. Combine butter and water and have a pastry brush ready.
4. Arrange one sheet of pastry on work surface. Brush with butter and sprinkle with a bit of the breadcrumbs. Repeat with 4 more layers. *You could also use olive oil and spray it from an oil atomizer.*
5. Arrange 1 cup (125 mL) cheese mixture down one long edge of pastry. Roll up lengthwise tucking in ends as you roll. Transfer to a baking sheet and score the top of the pastry with horizontal slashes into 10 to 20 pieces depending how thick you would like them to be. Don’t cut all the way through the strudels just the top layers of phyllo. Repeat until 4 rolls are made. Brush with any extra butter.
6. Bake in a 200 ºC (400 ºF) oven for 20 to 25 minutes until well browned. Slice through and serve warm or at room temperature.
7. Makes 45 to 50 pieces
8. Wrap whole or half strudels and freeze for up to 2 months. Reheat thawed strudels for 10 minutes at 350F and they will crisp up again beautifully.
