Spinach and Chicken Salad With Pine Nuts

Another left-over chicken recipe to try. Dressing makes a lot for the amount of chicken - save some for later.
Ingredients:
1 1/2 cups baby spinach leaves or 1 1/2 cups mixed greens
4 cups sliced chicken breasts
1/2 cup toasted pine nuts
1 teaspoon dried tarragon
1 teaspoon grated lemon, rind of
1/2 teaspoon ground nutmeg
2/3 cup olive oil
2/3 cup white wine vinegar
Directions:
1. Mix dressing well.
2. Toss with first three ingredients.
