Spinach and Cheese Squares

A really tasty snack dish from the American Diabetes Association. I used flax seed instead of the wheat germ, but that's the way the recipe was written.
Ingredients:
2 large eggs or 1/2 cup egg substitute
6 tablespoons whole wheat flour
1 (10 ounce) package frozen chopped spinach, thawed
2 cups low fat cottage cheese
2 cups low-fat cheddar cheese
1/2 teaspoon black pepper, fresh ground
1/8 teaspoon cayenne pepper
1/8 teaspoon nutmeg
3 tablespoons wheat germ
Directions:
1. In a large bowl beat the eggs with the flour until the mixture is smooth.
2. Add the spinach, cheeses, cayenne and nutmeg, and mix the ingredients will. Pour mixture into a nonstick coated 13/9/2-inch baking pan.
3. Sprinkle the top with wheat germ and bake at 350 degrees F. for about 45 minutes.
4. Let stand for about 10 minutes and then cut into 1 1/2 inch squares for serving.
