Spinach And Artichoke Dip With Homemade Pita Chips

This is a great dip. I know there are several recipes for this. I thought I would share mine. And the homemade Pita chips make all the difference.
Ingredients:
1/2 stick butter
1 large shallot minced
2-3 cloves garlic minced
1/4 cup flour
1 pint heavy cream
1/2 teas.salt
1/4 teas. pepper
dash of worcestershire sauce
juice of 1/2 lemon
1/2 cup shredded cheddar cheese
2/3 cup shredded parmesan cheese
2 10 oz. pkgs. spinach thawed drained well and chopped ( i use 1/2 a large bag of fresh spinach blanched for a couple of min., water squeezed out and chopped)
1 14 oz. can artichoke hearts drained and chopped
for the pita chips
1 12 oz pkg. pita bread approx. 6 pieces
1/4-1/2 cup olive oil
2 cloves garlic smashed
salt and pepper
Directions:
1. Melt butter in a 2 quart or so sauce pan
2. Add Shallots and garlic and cook to soften
3. Stir in flour stirring a couple of min. to darken a bit
4. pour in Heavy Cream turn up heat alittle and stir till thickens
5. Add cheeses and stir to melt
6. Add salt, pepper and Worcestershire sauce and Lemon juice
7. Add Spinach and artichoke hearts and mix well
8. pour into baking dish and bake at 425 for 15-20 min til bubbly and browning alittle
9. serve with pita chips
10. For the Pita chips:
11. Pour olive oil into small dish and add garlic cloves salt and pepper and let marinate while cutting the bread
12. Cut the each piece of Pita bread into 8 triangles
13. Brush pieces of bread with the flavored Olive oil
14. Lay out on cookie sheet and bake at 375 for 10-12 min. until browned and crisp
15. take out of of oven and sprinkle with salt and alittle Pepper
