Spinach And Artichoke Dip

A very good dip recipe that goes over well at potlucks.
Ingredients:
1/2 cup shallots, minced
2 10 oz pkgs chopped frozen spinach, thawed and drained
4 cloves fresh garlic, minced
4 tbsp butter
2 8 oz cans artichoke hearts drained
2 cups heavy cream
4 oz garlic herb cheese (your favorite, should be a stronger cheese)
1 tsp kosher salt
1/2 tsp white pepper
1/4 cup freshly grated parmesan cheese (or more if you like)
Directions:
1. Saute shallots and garlic in butter
2. Add spinach and artichokes, break up well, heat briefly.
3. Add cream, garlic herb cheese, salt, pepper
4. Simmer until cheese is melted and mixture is blended.
5. Remove from heat, fold in parmesan cheese.
6. Transfer to slow cooker.
7. Serve warm with tortilla chips or crackers
8. I tend to add and subtract ingredients to taste, I like to experiment with different/more cheeses than the recipe calls for.
