Spinach Ala Tom Or ( Jena Se Qua)

A whole different take on one of my Dad's dishes. Over the Thanksgiving week-end my Daughter made an Omelet using some of this as a filling. This will also make a great dip, just add some chopped, pickled artichokes and some swiss cheese.
Ingredients:

i wanted to add that some cream cheese, sour cream added to this mixture would make a great dip, just add some milk to the cream cheese if needed to make it less thick, just don't over do it. i would add after all the other ingredients are cooked.
a recipe something like my dad used to make , except he put 2 eggs in it and scrambled it all together, i don't do that. i also added a few things to it. of course all you velveeta fans can add that instead of the fresh parmesan.
1 - 9 oz package green giant frozen chopped spinach
3 tbs. oscar mayer chopped bacon( in the yellow plastic pouch in the salad isle of your store) it's really lower fat and easier to use than regular bacon and it also tastes good.
1/2 of a small yellow onion diced
2 tbs unsalted butter
small amount of fresh shredded parmesan cheese for garnish.
Directions:
1. Take the spinach out of the box and cut a small slit in the top of the plastic, put in a microwave approved dish , cook for 6 minutes on high.
2. I took the spinach (couldn't find my strainer) and drained it in a calderon on top of a paper towel and squeezed most of the liquid out of it. Please be sure to drain good or you could have spinach and bacon soup.
3. While spinach is cooking heat a small sauté pan with the butter add the chopped onions sauté till onions almost done then add the chopped bacon and sauté a few more minutes. Take the drained spinach and break it up and add to the mixture, add the cheese and turn off heat , let it sit till cheese melts.
