This spread adds spicy zing to anything that usually uses a spread. Bagels, crackers, make it extra spicy and mix it with cream cheese or sour cream to make a great spread or dip.
Ingredients:
5 or 10 romano or capocoli tomatoes
1/4 cup of canola oil or extra virgin oilive oil
10-12 dried red chillies( add less if you want less spicy)
1 teaspoon of mustard seeds
1 teaspoon of cumin seeds
2 tablespoon of corriander seeds
1/4 cup of chana dhal
2 tablespoons white moong dhal
1/2 teaspoon of asfoteda powder or 2-3 dried cloves of gralic
1 teaspoon of fennagreek seeds
1/2 cup of balsamic vinager
Directions:
1. First pre-heat oven to 350 degree F. 2. split the tomatoes in quaters and drizzel with oil and 1/4 of the balsamic vinager 3. Roast in the oven for 10-20 min. until soft and tender 4. Meanwhile in a saute pan heat the remaining oil and add one at a time and stir the following ingredients until everything turns a dark golden brown color. 5. 1/4 of a cup of chana dhal 6. 2 tbs of moon dhal 7. 1tsp mustard seeds 8. 1 tsp cumin seeds 9. 2 tbs corriander seeds 10. 1tsp fennagreek seeds 11. 10-12 dried red chillies 12. 1/2 tsp asfoteda powder or 2-3 dried garlic cloves 13. When everything turns a golden brown add the remaining balsamic vinager and turn the heat to low and let the ingredients come to a slow simmer. 14. When the dish is simmering then add the tomatoes and let them cook till then disolve and the dish a thick like a paste. 15. Allow ingredients to cool 16. Then grind everything in a wet grinder (Magic bullet) to a smooth paste. 17. add salt if needed, the balsamic vinager adds a little but add salt to desired taste. 18. You can mix it with rice or with cream cheese and make a cheese spread for crackers and begals.
