Spicy Tomato Prawns

Another Donna Hay recipe.
Ingredients:
2 tablespoons vegetable oil
1 brown onion, sliced
4 garlic cloves
2 small red chilies, crushed
1 tablespoon grated ginger
3 cups tomato puree
1 cup fish stock
1/4 cup malt vinegar
1/4 cup caster sugar
sea salt and black pepper
1 kg prawns
coriander leaves, extra chopped chilli and steamed rice to serve
Directions:
1. Heat oil in large pan.
2. Add the onion, garlic, chilli and ginger.
3. Cook for 2-3 minutes.
4. Add tomato puree, stock, vinegar, sugar, salt and pepper and cook for 8-10 minutes.
5. Add prawns and cook for 3-4 minutes until cooked through.
