Spicy Thai Rice

This is a great side dish! Quick, easy and so tasty, too!
Ingredients:
2c. water
1c. uncooked long grain white rice
1/4c. chopped green onions
2 fresh red chilies; seeded & chopped
1t. snipped cilantro
1t. butter
1t. fresh ginger; minced
3/4t. salt
1/8t. ground tumeric
1 to 2t. lime juice
chopped roasted peanuts & red pepper flakes: optional garnish
Directions:
1. Combine 1st 9 ingredients in 2 to 3 qt. saucepan.
2. Bring to a boil; stirring once or twice.
3. Reduce heat; cover & simmer 15 min. or until rice is tender & liquid is absorbed.
4. Stir in lime juice & fluff with a fork.
5. Garnish with peanuts & red pepper flakes.
