Spicy Sweet Potato And Bacon Casserole

This would be a great side for Easter dinner. A little different from the ordinary sweet potato casserole.
Ingredients:
4 slices high quality white sandwich bread, torn into quarters
2 tablespoons unsalted butter, melted
2 1/2 cups shredded sharp cheddar cheese, divided
8 slices bacon, chopped
1 yellow onion, minced
4 cloves garlic, minced
1/2 teaspoon ground red pepper or to taste
4 1/2 pounds sweet potatoes, halved lengthwise and thinly sliced
3/4 cup heavy cream
3/4 cup buttermilk
2 teaspoons salt
5 green onions, thinly sliced, divided
Directions:
1. Pulse bread, melted butter and 1/2 cup cheese in a blended or food processor until bread is coarsely ground, about 6 pulses
2. Set aside
3. Cook bacon in a large, heavy bottomed pot until crisp
4. Transfer the bacon to a paper towel lined plate
5. Pour off all but 1 tablespoon of the fat from the bacon
6. Add onion and cook until softened
7. Add garlic and cayenne and cook until fragrant
8. Stir in sweet potatoes, cream, buttermilk and salt
9. Reduce heat to medium low and cook, covered until the potatoes are just tender, about 30 minutes
10. Preheat oven to 425
11. Remove pot from heat and stir in remaining cheese, cooked bacon and 4 sliced green onions
12. Transfer mixture to a 13x9 inch baking dish
13. Top evenly with the bread crumb mixture
14. Bake until crumbs are golden brown, about 15 minutes
15. Cool for 10 minutes, then sprinkle evenly with remaining green onion
