Spicy Stuffed Banana Peppers

These little peppers will make me break a sweat each time I eat them but they are good! Great way to use up those peppers in the garden!
Ingredients:
1 small finely chopped tomato
1/2 cup finely chopped onions
1/4 cup finely chopped sweet pickle
1/4 cup finely chopped bell pepper
2 finely chopped hot peppers, seeded if you want to cut the heat
1/2 pound grated sharp cheddar
1/8 teaspoon salt
6-8 banana peppers (larger the better)
6-8 slices bacon
Directions:
1. mix all except for banana peppers and bacon.
2. cut out a wedge in the banana peppers and remove seeds, saving the wedge to replace once pepper is stuffed.
3. Fill banana pepper with the cheese mixture.
4. Replace the cut out wedge and wrap with a slice of bacon. I use a toothpick to secure the bacon to the pepper.
5. Roast in a 400 degree oven until the bacon cooks.
