Spicy Stir Fried Eggplant

Ingredients:
1 medium eggplant, peeled and cut into 1 in. dice
1 tsp. garlic, finely chopped
1 tbls. cornstarch mixed with 2 tbls. water to make a paste
oil for deep frying
sauce
2 tbls. oyster sauce
2 tbls. soy sauce
2 tbls. water
1 tbls. white vinegar
1 tbls. sugar
1 tsp. chili paste
1/2 tsp. bean sauce
1/2 tsp. sesame oil
Directions:
1. Mix all sauce ingredients together and set aside
2. Put enough oil in wok to deep fry eggplant
3. Heat to 350
4. Fry eggplant for 1 minute
5. Remove and drain on paper towel
6. Remove all but 1 tsp.oil from wok
7. Stir-fry garlic for 5 seconds then add sauce
8. Reduce heat and simmer 20 seconds
9. Add eggplant and simmer for 10 seconds
10. Stir in cornstarch paste slowly until desired consistency
